Where did the word sauerkraut originate?

The word "sauerkraut" is of German origin. It is a compound word:

* "sauer" meaning "sour"

* "kraut" meaning "herb" or "vegetable"

Therefore, "sauerkraut" literally translates to "sour cabbage" in German.
