What do the letters stand for in infinity?

The symbol for infinity (∞) doesn't have any letters in it. It's a stylized figure eight, which is a visual representation of the concept of something limitless or endless.

It's believed that the symbol was first used by the English mathematician John Wallis in 1655, though its origins may go back even further.
